Method
Cut the chicken and vegetables into bite size pieces. Cut the mushrooms quite large as they will shrink a lot.
Whisk the sauce together and pour over the chicken. Let the chicken marinate for however long you'd like. Take out at fridge minimum 30 minutes before making the skewers.
Skew the meat and vegetables and grill. Remember that thigh can be quite forgiving, so don't worry about dryness.
