Refried beans. Great for burritos, tacos and easy vegetarian dishes.
Method
Soak the beans in water and hydrate them in the fridge for about 24 hours.
Dice onion and garlic fine and cook them in a bit of olive oil
Add spices and toast them in the pan
Add beans and enough bean water to cover about 1 cm above the beans. Cook the liquid down over a few hours. You can check the consistency by taking a spoon and cooling it down a bit, the beans will get much thicker when cooled.
When the dish has reached a good consistency (think chunky salsa thickness) take it off the heat and add an acid, I recommend apple cider vinegar, to your liking together with salt and pepper.
